Egg muffin...happy tummy!

I ran out of idea for a light dinner. Saw some eggs and a muffin pan...Hmmmm, lets try out the most talked about egg muffin. Our verdict...

  • easy to prepare, light and yet fulfilling, healthy alternative to our usual rice and bread!

Here goes the recipe:
Filling...cut and chop all the ingredients below into small pieces!
5 strips of chicken fillet (detox and purify the meat first, ya...)
(alternative - you could use minced chicken meat)
3 chicken sausages
half a carrot
2 stalks of celery
8 button mushrooms
Bamboo salt and white pepper

8 large eggs
2 tomatoes - chop into small pieces
Bamboo salt and black pepper

How to:

  1. Preheat oven at 180degrees.
  2. Prepare the filling. (Note: this could be prepared earlier and store in the freezer)
  3. Saute (just use a small amount of oil) the chicken meat, sausages, carrot and celery together.
  4. Add in bamboo salt and white pepper. 
  5. Allow the meat to tender, and put aside.
  6. Beat eggs in a large bowl, add in bamboo salt; and mix  the saute filling into the eggs.
  7. Prepare the muffin pan. Grease lightly. Pour the egg mixture into the muffin pan.
  8. Add in diced tomatoes and sprinkle black pepper into each muffin holes. 
  9. Baked for 20 - 30 minutes until the muffin top turns golden.

Lebih enak dimakan bersama ayam goreng berempah...Simple je dan mengenyangkan! Alhamdulillah ...happy tummy means happy me!!!
